What is Label Rouge, anyway?
Label Rouge is a procedure used for the production of gourmet chicken. This protocol used in France since 1960 produces a superior tasting bird that is vividly distinguishable for the conventionally raised chicken. Label Rouge requirements include:

The label Rouge process uses slow-growing birds that take at least twelve weeks to reach maturity in contrast to the six weeks allotted for industrial hybrids.
