A variety of birds

Tom and Tracey raise more than chicken on their farm!  In addition to the French Label Rouge and Cornish Cross chickens, they raise turkeys, ducks, and guinea fowl. 

French Label Rouge Chickens


Raised according to strict Label Rouge standards, these birds are slow-growing and well suited to outdoor production.  Because they spend longer outside on pasture, the meat on these birds develops a richer and more complex taste with firmer texture than their Cornish Cross cousins.   


Fresh Label Rouge chicken is available fresh from April until December.

Cornish Cross Chickens


The Cornish Cross breed is the poultry industry standard, but can be adapted to life on pasture.  These birds grow quite quickly, and are harvested at younger age than the Label Rouge birds.  They are especially prized for their broad breasts and overall meatiness of the bird.   


Fresh Pasture-raised Cornish Cross is available fresh from March until December. 

Bourbon Red Heritage Turkeys


Bourbon Red is a heritage turkey breed, and is the smaller of the two turkey varieties on at Pollo Real.  Because they don’t grow as large, Bourbon Red meat is lighter in flavor and texture. 


Due to high demand, Bourbon Red turkeys are available upon request only during the Thanksgiving and Christmas holiday season.  You may reserve your Bourbon Red at the Pollo Real booth at the Santa Fe Farmer’s Market on Saturdays. 

Broad-breasted Bronze Heritage Turkeys


Broad-breasted bronze is also a heritage turkey breed.  They grow slightly larger than the Bourbon Reds and give more breast meat.   


Due to high demand, Broad-breasted Bronze turkeys are available upon request only during the Thanksgiving and Christmas holiday season.  You may reserve your Broad-breasted bronze at the Pollo Real booth at the Santa Fe Farmer’s Market on Saturdays.

Layer chickens


Bovine brown chickens provide fresh eggs.  These birds forage on pasture and are completely free range and cage free.  Eggs are collected daily by hand.


Eggs are available from March until late October.      

New breeds of Heritage Turkeys


This season, Pollo Real has added four new breeds of heritage turkeys: Spanish Black, Slate, New Hollands, and Narragansett.  They’re small now, but will be ready in time for the fall and winter holiday season.
